Description

Hard cured bacon is one of the oldest  methods of curing in Ireland. This salting technique involves rubbing salt into the pork middles and leaving it to mature for a number of days/weeks. This curing method draws water out of the bacon thus enhancing the flavour and making the meat firm. Years ago the bacon would be hung in the house in a full fletch and scelps of it cut off when required.
